One of the things I'm going to try and be more consistant with this year is meal planning so I've made it my New Years Resolution. In 2010 I mastered the spur of the moment meal using whats in the pantry or fridge but I'm running low on the energy for that plus I was given some great cookbooks for Christmas I want to try out. Heres our menu for the week:
Monday: Vegetable Peanut Curry
Tuesday: CrockPot Beef Vegetable Stew
Wednesday: Leftovers
Thursday: Chicken Enchilada Casserole
Friday: Baked Potatoes with Spinach Cranberry Salad
Saturday: Poached Egg and Spinach Sandwiches
